Herbs can be used like a spice to flavor other foods or as a dish by themselves depending on which Herb your using.

Spices are used primarily to add flavor to an otherwise ordinary dish.

Teresa's Herbed Pepper cheese

2 pints whole milk
2 Tablespoons buttermilk
1 teaspoon salt
2 Tablespoons course ground black pepper
1/8 teaspoon of powder red pepper
1/8 teaspoon of oregano
1/8 teaspoon of thyme
muslin cloth
Cheese cloth

In meduim saucepan over medium low heat, warm milk to l00 degrees; stir in butter milk. Pour into medium bowl.

Cover bowl; let stand in warm place 24 to 48 hours until mixture is soft curd. Line a colander with muslim cloth and place it in the sink.

Pour soft curd into colander; let drain 12 minutes. Set colander in large bowl which a rack has been placed inside; cover with saran wrap and refrigerate 24 hours.

Spoon curd into medium bowl. Stir in salt and remaining ingredients. Throw away any remaining liquid.

Place a dampened double lining of cheesecloth in mold of the shape you wish the cheese to be. Leaving a 2-3 inch overhang. Spoon the curds into the mold. Then fold cheesecloth over the edges.

Cover with saran wrap and refrigerate for another 24 hours giving the flavors time to blend.

Carefully unmold cheese onto serving dish.

Garnish with olives or parsley

Serve with Crackers or Fruit
 
 
Rose Petal Jam


40 lg Red roses
3 lb Sugar
2 pt Water
1/2 Lemon

Take the roses and cut off the white ends. Make a syrup with the sugar and water. Then add the juice of the half a lemon and the rose petals. Boil until the roses crystallize, stirring frequently with a wooden spoon.
